Kid-Friendly Sweet & Sour Cucumber Salad
This is a very easy salad to prepare, can be made ahead and easily refrigerated and served the next day. Great little salad for a pot-luck, just 'doll up' with some green onions and sesame seeds. Perfect picnic salad. Toddlers really like this salad as it has a sour-sweet flavour. Can add some steamed cooled peas and/or canned corn kernels.
2 tbsp white sugar
2 tbsp white vinegar
2 tbsp freshly squeezed lime juice
2 tbsp olive oil
1 tsp dark sesame oil
1/2 tsp salt
In a bowl or sealing jar, stir sugar with vinegar, lime juice, olive oil, sesame oil and salt until dissolved.
2 English cucumbers (peeled then sliced in half - use spoon and scrape out seeds and discard seeds then thinly chopped the cucumber half into thin slices)
1 red pepper (finely chopped)
1/4-1/2 red onion (finely chopped)
1/2 cup chopped
(can add a chopped jalapeno, if child likes some heat)
Mix above with dressing. Refrigerate for awhile for the flavours to blend.
